This ale is the result of a mixed fermentation of American yeast, lactic acid bacteria and some wild yeast strains. It was aged for several months in Cabernet Sauvignon barrels. It was then generously cold hopped with modern hops. (Azacca, Citra, El Dorado and Idaho 7) The final result is a dry beer with a tropical and wild flavor.
